No Bake Club Cracker Cookies 

54 Club crackers
1/2 c. butter
1/3 c. milk
3/4 c packed brown sugar
1/2 c. sugar
1 c. graham cracker crumbs
6 oz. semi-sweet chocolate chips (1 c.)
2/3 c. peanut butter
1/2 c. crushed peanut

Line the bottom of a 13 x 9 x 2 inch baking pan with 27 of the crackers. Melt butter in a small saucepan. Add milk, brown sugar, sugar and graham cracker crumbs in that order. Bring to a boil and boil 5 minutes. Pour over crackers. Top with a second layer of 27 crackers. Melt chocolate chips and peanut butter together. Spread over crackers. Sprinkle with crushed peanuts. Chill 3 hours. Cut into bars. Store in refrigerator. Makes 32.



Stroganoff Stew

1 lb stew beef, browned and cubed
2 cups of water
1 can cream of mushroom soup
1 tsp onion powder
¼ tsp garlic powder
1 tsp worstershire sauce
1 8 oz container sour cream
1 c. uncooked egg noodles

Cook beef in water until fork tender. Stir in remaining ingredients except for sour cream and warm over medium high heat until bubbly and noodles softened (typically 7-9 minutes). Stir in sour cream and serve.  

This recipe can easily be doubled or tripled and is just as easy. You can also spice it up by adding onions and green peppers after meat is tender when adding the other ingredients.

 

 

 Low-Cal Diet Cranberry Lime-Aide
1 can Sprite Zero
6 oz. Ocean Spray Cranergy (I prefer the Pomegranate type)
Lime slices (as desired)
Ice

This makes for a large cool dink on a hot day. Perfect for the afternoon when you start getting tired. Very Refreshing!




Easy Ham bake
**great for breakfast

5 eggs
1/2 c. milk
8 oz. shredded cheddar or parmesan cheese
8 oz chopped ham
1/3 c. bisquick heart smart

mix together bake 20 mins on 400 in round cake pan(lightly greased, I use spray)

You can lighten up this recipe by using the following: skim milk, fat free cheddar, egg beaters (1/4 c. = 1 egg)




Easy Cheesy Potato Soup

Boil 5 lb bag peeled/chopped white or red potatos until soft
Drain.
Add 1 quart 2% milk and simmer on low for 45 minutes. This should not ever boil.
Mash potatos while in pot, this should be very simple at this stage.
Add 8 oz. shredded cheddar cheese and allow to melt in, stirring every few minutes. Add salt to taste.

**This is a simple homemade soup with very few ingredients that kids seem to love. It takes a while but the actual work required is minimal and many other things can be done while it is left to simmer.




BBQ POT PIE
1 frozen pie crust, allow to thaw as directed.
1 container Fully cooked pulled bbq pork or chicken (I prefer chicken for lower fat content)
1 1/2 c. of Orieda Frozen Potatoes O'Brien
1 1/2 c. shredded cheddar cheese (I use 2% but again this would be your preference)
1 can corn (drained)

Preheat oven to 350. Bake crust for 5 mins, remove from oven.
Spoon 1/2 of bbq into crust and layer of 1/2 of cheese on top.
Layer potatoes and corn on top of cheese. Top with remaining bbq and then cheese.
Bake at 350 for 30-40 minutes.
Let stand 5 mins before serving.
